    Since cheeses vary in texture and moisture content, there are cheese slicers that are special for cutting gourmet cheeses. You can find cheese knives, which have a very small surface area, so that the cheese doesn't adhere to the blade. There are also cheese slicers that work like a carpenter's plane, chipping off slices off the top of a block of cheese. Then there are guillotine-style cutters, using either a wire or a sharp blade that cuts through the cheese. Then there is a cheese plane, where you run the cheese over a stationary blade. Note that some cheese slicers are made to cut uniform slices, while others let you vary the thickness of the slice.
